Savory Whole Potatoes

 


Ingredients
1 (15.0 oz.) can of Whole White Potatoes, drained
1 (14.5 oz.) can crushed tomatoes
1 cup sliced leeks, separated into rings
3 medium cloves garlic, minced
1/2 tsp. dried thyme
1/4 tsp. dried oregano
1/2 cup beef broth
3 tbsp. butter, sliced
1/2 tsp. salt
1/2 tsp. pepper
Heat oven to 450oF.  Lightly grease 8-inch pie pan  and add potatoes.  In small mixing bowl, combine tomatoes, leeks, garlic, and seasonings; pour into pan.  Add broth to mixture and place butter on top.  Bake uncovered about 30 minutes.
Makes 4 servings
