Rice Pilaf with Peas
Ingredients |
1 (15.0 oz.) can of No Salt Sweet Peas, undrained |
4 tbsp. unsalted butter |
2 shallots, minced |
1 cup brown rice |
2 tsp. chopped parsley |
1/4 tsp. black pepper |
2 - 1/2 cup chicken broth |
Melt butter in saucepan. Add shallots; saute until softened, about 5 minutes. Add rice, stirring to glaze. Add parsley, pepper, and broth. Stir and bring to boil. Reduce heat, cover, and cook about 45 minutes. Heat peas in separate saucepan; drain and mix with rice. |
