Refried Beans

 


Ingredients
1 (15.0 oz.) can of Organic Pinto Beans, rinsed and drained
2 tbsp. canola oil
1/4 cup finely chopped red onion
1/2 tsp. minced garlic
1 medium jalapeno pepper, seeded and finely chopped
1 tsp. ground cumin
Salt and freshly ground pepper to taste
Heat canola oil in medium skillet. Saute onion, garlic, and pepper until onion is soft, approximately 4 minutes. Stir in cumin and add pinto beans. Using back of spoon, mash approximately half of the pinto beans. Cook, stirring until mixture is thick and creamy, approximately 2 minutes. Season to taste with salt and pepper.
