Quick Ditalini Vegetable Soup



2 cups Dakota Growers® Ditalini or Elbow Macaroni

2 tablespoons olive oil

2 medium carrots, cut into julienne strips

1 stalk celery, chopped

1 medium onion, chopped

2 cloves garlic, minced

1 1/2 teaspoons dried basil

2 cans (14-1/2 ounces each) chicken broth

1 cup water

1 can (14-1/2 ounces) stewed tomatoes


  Directions Heat oil in a Dutch oven over medium heat. Add carrots, celery, onions, garlic and basil; cook 5 minutes or until vegetables are tender. Add the chicken broth, water and tomatoes. Cover the pot and bring mixture to a boil over high heat. Add the ditalini and reduce heat to medium; cook uncovered until pasta is tender, about 10 minutes. Servings 6
