Pasta Primavera

Penne Pasta with Red Primavera Sauce



16 ounces Dakota Growers Penne Rigate

2 tablespoons olive oil

1/4 cup red onion, chopped

1 cup broccoli florets

2 carrots, chopped

1 yellow bell pepper, chopped

2 ribs celery, chopped

8 ounces mushrooms, sliced

1/4 cup fresh basil, chopped or 1 teaspoon dried

16 ounces spinach, chopped

1/2 teaspoon garlic salt

1/8 teaspoon hot pepper flakes

1 jar (26-ounces) marinara Sauce

1/4 cup grated Parmesan


  Directions Heat olive oil in a large skillet over medium high heat; sauté onion, broccoli, carrots, bell pepper, celery, mushrooms and basil until soft, about 5 minutes. Add spinach, garlic salt and hot pepper flakes. Add marinara sauce and simmer for 15 minutes. Prepare penne rigate according to package directions; drain well. Toss pasta with sauce mixture and sprinkle Parmesan cheese. Chef’s Note: Penne is an excellent pasta to use with a wide variety of tomato and vegetable sauces. Sauté fresh summer vegetables in olive oil and toss with hot pasta and fresh Parmesan and herbs for a quick and easy meal. Servings 6
