Orange Glazed Beets

 


Ingredients
1 (15.0 oz.) can or (16.0 oz.) jar of Whole Pickled Beets, drained
1/4 tsp. salt
1 medium-sized oranges
1/2 cup orange marmalade
1 tbsp. cornstarch
1/4 tbsp. prepared mustard
From one orange, grate 1 tbsp. peel and squeeze 1/4 cup juice.  In a 4-qt. saucepan, mix orange marmalade, cornstarch, mustard, orange peel, orange juice and salt.  Add beets; over medium heat, heat mixture to boiling.  Boil for 1 minute, stirring occasionally.  Pour mixture into bowl; cover and refrigerate.  To serve, slice remaining orange and arrange on large platter.  Spoon beets and sauce onto platter.  Sprinkle with reserved orange peel.
