Golden Corn Casserole

 


Ingredients
1 (15.0 oz.) can of Gold & White Sweet Corn, drained
1/4 cup onion, chopped
1/2 tbsp. margarine
1 tbsp. flour
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. pepper
1/2 cup low-fat sour cream
1 tsp. crispy bacon, crumbled
1/2 tbsp. fresh chives, chopped
Preheat oven at 350oF. In small skillet, cook onion in margarine until tender. Add flour, garlic, salt, pepper, and sour cream. Cook until bubbly, stirirng constantly. Remove from heat; add corn and half of bacon. Pour into 1-qt. baking dish and sprinkle remaining bacon and chives over top. Bake uncovered for 20 - 25 minutes.
