Fettuccine with Fresh Tomatoes



1 pound fettuccine

4 medium ripe tomatoes, diced

1 medium red onion, chopped

1 clove garlic, minced

3/4 cup fresh basil, shredded

1 cup parsley, chopped

4 tablespoons extra virgin olive oil

2 1/2 teaspoons balsamic vinegar

salt and pepper to taste

1/2 cup black olives, chopped

1/4 cup Parmesan cheese, shredded


  Directions Combine all ingredients except fettuccine. Cook fettuccine according to package directions, drain, and add to tomatoes. Sprinkle cheese on top, and serve warm, cold or at room temperature. Servings 4
