Festive Beet and Citrus Salsa

 


Ingredients
1 (15.0 oz.) can or (16.0 oz.) jar of Sliced Pickled Beets, drained and chopped
1/2 cup mandarin oranges, drained and diced
2 tbsp. green onion, chopped
2 tbsp. cilantro, minced
1 tbsp. fresh lime juice
2 tsp. fresh ginger, minced
1/4 tsp. salt
Place all ingredients in medium bowl; stir gently to combine. Cover and refrigerate about 30 minutes to let flavors blend. Serve with crackers, flatbread, or chips.
Makes approximately 2 cups
