Asian Bow-Tie Pasta Salad with Shrimp and Vegetables

Ingredients:  

 

16 ounces Dakota Growers Farfalle

1/2 cup peanut oil

1/3 cup reduced sodium soy sauce

1/3 cup rice vinegar

1 tablespoon sugar

1 tablespoon oriental sesame oil

1/4 teaspoon crushed red pepper flakes, or to desired taste

12 ounces cooked medium shrimp, cleaned and deveined

1 red bell peppers, cut into 1/2-inch pieces

2 cups broccoli florets

1 cup sliced carrot

grated fresh ginger

1/3 cup roasted crushed peanuts

 

  Directions In a large bowl, whisk peanut oil, soy sauce, vinegar, sugar, sesame oil and pepper flakes. Mix in shrimp and bell peppers; marinate for 15 minutes. Prepare farfalle according to package directions. During last 2 minutes add broccoli florets; rinse in cold water and drain well. Combine pasta with shrimp and vegetable mixture. Toss with additional dressing to coat well. Serve at room temperature or cover and chill up to 6 hours. Servings 8
