Tomato and Goat Cheese Sauce with Shrimp



16-ounces cavatappi

4 tablespoons olive oil, divided

2 cloves garlic, minced

2 cups peeled, seeded and chopped ripe tomatoes

1/3 cup dry white wine

1/4 cup chopped fresh basil

Salt and freshly ground pepper to taste

1 pound medium shrimp, cleaned and deveined

1/8 teaspoon crushed dried red pepper flakes

1/2 pound goat cheese


  Directions Heat 2 tablespoons olive oil in a saucepan over medium heat, sauté the garlic for 1 minute. Add the tomatoes and cook, stirring constantly, for 2 to 3 minutes. Add the wine, basil, salt and pepper. Simmer, stirring occasionally for 10 minutes. In a medium-size skillet, heat the remaining 2 tablespoons olive oil over high heat. Add the shrimp and sauté for 1 to 2 minutes or until the shrimp are pink. Sprinkle with red pepper. Add shrimp to the tomato sauce. Serve immediately over hot pasta and sprinkle each serving with goat cheese. Servings 4
