Seafood Gemelli with Ginger Dressing



16 ounces Dakota Growers Gemelli

16 ounces crab or shrimp

1 cup jicama, chopped

1/4 cup chopped fresh cilantro

2 medium cucumbers, halved and sliced

2 cups carrots, julianned

1/2 cup mayonnaise

1/2 cup plain yogurt

1 tablespoon soy sauce

1 teaspoon sugar

1 teaspoon ground ginger

red pepper to taste


  Directions Cook gemelli according to package directions; rinse in cold water and drain. In large bowl, combine pasta with seafood, jicama, cucumbers, and carrots. In a small bowl, mix together mayonnaise, yogurt, soy sauce, sugar, ginger, and red pepper. Combine dressing with salad mixture. Chill. Servings 8
