Farfalle with Shrimp and Mushrooms



12 ounces Dakota Growers Farfalle

1/4 cup olive oil

1/2 cup chopped white onion

1 jar (6 ounces) roasted red peppers, cut into 1"x1 1/4" slices

1/2 cup chopped fresh parsley

1/4 teaspoon hot red pepper flakes

8 ounces fresh white mushrooms (if available, a mixture of Portobello, shiitake and white mushrooms)

8 ounces small shrimp

1 cup cream

1 teaspoon ground nutmeg

1/4 cup Parmesan cheese


  Directions In a large skillet, heat olive oil and cook onion, peppers, parsley and pepper flakes over high heat for 4 minutes. Add mushrooms and shrimp and cook for 5 minutes over medium-high heat. Add cream and nutmeg and simmer 20 minutes. Prepare farfalle according to package directions; drain well and toss pasta with sauce. Top with Parmesan cheese. Servings 4
