Rainbow Farfalle Salad with Fresh Basil



12 ounces Tri-color Bow Ties

1 1/2 cups broccoli flowerets

1 cup plain yogurt

1/2 cup mayonnaise

1 1/2 tablespoons white-wine vinegar

1/2 cup minced fresh parsley leaves

1/2 cup finely chopped assorted fresh Basil

Salt and Pepper to taste

1 small red onion, quartered and sliced thin

1 can (6 ounces) pitted black olives, chopped in half

8 ounces cherry tomatoes, chopped in half


  Directions Prepare tri-color bow ties according to package directions. During last two minutes of cooking pasta, add broccoli and blanch. Drain and rinse in cold water. Drain well. In a large bowl whisk together yogurt, mayonnaise, vinegar, parsley, basil, salt and pepper. Combine pasta with vegetables and dressing. Toss until well coated. Cover and chill. Servings 8
