Greek-style Chicken Pasta Salad
Ingredients:
12 ounces Dakota Growers Farfalle
16 ounces fresh or frozen green beans; thawed and drained
3/4 cup olive oil
1/4 cup white wine vinegar
1 teaspoon dried basil
Salt & Pepper to taste
2 cups cooked chicken, cubed
1 medium red onion, sliced in rings
3 Roma tomatoes, seeded and chopped
4 ounces feta cheese, crumbled
1 (6-ounce) can pitted black olives, sliced
Directions Prepare Farfalle according to package directions. When farfalle is nearly done, add green beans to boiling water and blanch for 1 minute; drain well. In a small bowl, whisk together olive oil, white wine vinegar, basil, salt and pepper. Set aside. In a large bowl, combine remaining ingredients. Add pasta and green beans, pour dressing over mixture and toss well. Refrigerate. Servings 4
