Black Bean Macaroni Salad



16 ounces Dakota Growers Farfalle, uncooked

16 ounces round steak or chicken strips, cut julienne

1/3 cup lime juice

1/3 cup olive oil

4 cloves garlic

dried oregano, cilantro, parsley

1 (15-ounce) can black beans, rinsed and drained

1 green bell pepper, cut into 1-inch pieces

2 green onions (with tops) chopped

1 cup cherry tomato halves

2 cups shredded Monterey Jack cheese

Salt & Pepper to taste

  Directions Place lime juice, olive oil, garlic and herbs in a food processor and blend well. Pour over steak or chicken and marinate for four hours. Prepare farfalle according to package directions. In a skillet, brown beef or chicken strips. In a large bowl, mix black beans, green bell pepper, green onions, tomatoes and Monterey Jack cheese. Toss pasta and meat with beans and vegetables. To serve, line serving bowls with lettuce. Place pasta mixture over lettuce. Have side servings of sour cream, guacamole and salsa. Servings 4
