Gnocchi Pasta w/ chicken, sun-dried tomatoes, Nuts
Ingredients:
16 ounces Dakota Growers Gnocchi pasta
3 ounces sun-dried tomatoes
1 tablespoon olive oil
2 garlic cloves, minced
2 cups cooked chicken, cubed
1/2 cup chopped fresh basil
1/2 cup chicken broth
6 ounces Kalamata olives, sliced
3 ounces Gorgonzola cheese, crumbled
Salt and Pepper to taste
1/4 cup pine nuts, toasted
Directions 1. Cook gnocchi according to package directions; rinse in cold water and drain well. 2. Soak sun-dried tomatoes in water. 3. Meanwhile, heat olive oil in large sauté pan over medium-high heat. Add garlic and sauté 1 minute. Add sun-dried tomatoes, chicken, basil, broth, cheese and Kalamata olives and bring to a boil. Season to taste with salt and pepper. 4. Add sauce to pasta and toss to coat. Top with pine nuts and serve. Servings 4
