Chicken Linguine



12-ounce package linguine

4 large chicken breasts

2 medium onions, chopped

1 15-ounce can Italian seasoned diced tomatoes, drained

1 clove garlic, minced

1 teaspoon ground cumin

3 cups chicken stock

Salt to taste

1 cup Mozzarella cheese, shredded


  Directions Preheat oven to 350 degrees. Cook linguine according to package directions; drain. Cook chicken in water until tender. In a large mixing bowl, save 3 cups of broth. Cut chicken into large pieces and mix with cooked linguine. Add onion, tomatoes, spices, broth, and salt to taste. Mix together and put in casserole dish. Cover and bake 2 hours. Uncover and top with Mozzarella cheese. Bake until cheese is melted. Servings 8
