1 tbsp vegetable oil
4 butterfly pork chops
2 tbsp butter
2 onions, peeled and thinly sliced
1/4 red pepper, diced
1 cup plum sauce
Salt and pepper to taste
Preheat oven to 150˚F.
Brush oil over grill or frying pan.
Place on burner and when hot, add pork. Cook 3 minutes over medium heat. Season well and turn pork over; continue cooking 3 minutes over medium heat. Turn pork again; cook 2 to 3 minutes over low heat or until done to taste. Keep hot in oven.
Heat butter in frying pan. When hot, add onions and cook 7 to 9 minutes over medium heat. Stir occasionally.
Add diced red pepper and cook 1 minute.
Season well and mix in plum sauce; continue cooking 2 minutes.
Garnish the pork with onions and serve with Piggly Wiggly Thick Cut Fries
