Speedy Lasagna Casserole

 


Ingredients:  
16 ounces Dakota Growers Egg Noodles 
16 ounces lean ground beef
1 medium onion, chopped 
1 clove garlic, minced 
1 jar (26-ounces) marinara sauce
Salt and pepper to taste
1 3/4 cups fat-free ricotta cheese 
2 cups (8 ounces) shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese 
  Directions Prepare egg noodles according to package directions; drain well. In a Dutch oven or large skillet over medium heat, brown the ground beef, onion and garlic. Drain juice. Add marinara sauce and simmer for 15 minutes. In a medium bowl, mix together the ricotta, 1 cup mozzarella and Parmesan cheese. Toss the meat mixture and egg noodles together. Coat a large casserole baking dish with non-stick cooking spray. Layer 1/3 of the pasta and meat mixture. Spread 1/2 of the cheese mixture; repeat layers and top off with the remaining noodle and meat mixture. Sprinkle the remaining 1 cup of mozzarella cheese. Cover and bake at 350 F for 20 minutes or until heated through. Let set for 10 minutes and serve. Servings 6
