Savory Penne

 


Penne Saporite 
Ingredients:  
12 ounces Organic Penne Rigate
1 pound Organic tomatoes
1 red onion
1 teaspoon minced garlic
1 tablespoon chopped sun dried tomatoes
1 cup chopped Organic mushrooms (crimini or shitake)
1/2 cup chevre or Organic feta cheese
1/4 cup basil, fresh chopped
1/4 cup oregano, fresh chopped
2 tablespoon extra virgin olive oil
1 teaspoon each salt & pepper
  Directions Heat oil in 12 inch fry pan over medium heat. Chop onion coarsely and add with garlic to pan. Cook five minutes, stirring. Wash and chop tomatoes, add to pan. Stir in mushrooms, basil, oregano, salt and pepper. Cook 15 minutes, stirring occasionally. Meanwhile, boil pasta according to package directions. Drain well. Transfer to serving bowl and toss with cheese and prepared sauce. Servings 4
