Pasta Frittata
| Ingredients: |
| 8 ounces Fine Egg Noodles |
| 4 eggs |
| Salt and Pepper to taste |
| 1/4 cup grated Parmesan cheese |
| 2 tablespoons butter |
| 1/4 cup chopped onion |
| 1 cup shredded Mozzarella cheese |
| 2 ounces Prosciutto or cooked and crumbled bacon |
| 3 roma tomatoes |
| 1 tablespoon chopped fresh parsley |
| Directions Prepare pasta according to package directions. In a medium bowl, beat eggs. Mix in pasta, salt, pepper and Parmesan. In a medium skillet, heat butter over medium heat. Cook onions for 5 minutes or until tender. Remove skillet from heat. Add pasta to the onions and mix. Spread pasta out like a pancake to the edges. Layer shredded mozzarella, prosciutto and tomatoes and cook for 5 minutes or until crispy-brown. Pre-heat oven broiler. Transfer frattita to an oven-safe platter or pizza pan. Sprinkle with additional Parmesan cheese. Place under the broiler for 5 minutes or until the frittata begins to turn golden-brown. Cut into wedges and serve. Servings 4 |
