Marinated Beans with Cavatappi
Ingredients:
16 ounces Dakota Growers Cavatappi
1 can (15 1/2-ounces) great northern beans
1 can (15 1/2-ounces) kidney beans
1 green bell pepper, cut into 3/4" pieces
2 tablespoons fresh chives, chopped
1/4 cup olive oil
1/4 cup red wine vinegar
2 teaspoons lemon juice
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 teaspoon dried basil
Directions Cook cavatappi according to package directions; rinse in cold water and drain. In separate bowl combine great northern beans, kidney beans, green pepper, and fresh chives. In a separate mixing bowl combine olive oil, red wine vinegar, lemon juice, sugar, salt, cayenne pepper, and basil; whisk together until well blended. Toss with beans and pasta until well coated. Refrigerate for one hour. As an option, serve on spinach leaves. Servings 6
