Dumpling Noodle Fritata (open-faced omelet)

1 tablespoon red onion, chopped

1 tablespoon green onion, chopped

1 tablespoon white onion, chopped

1/4 cup yellow bell pepper, chopped

1/2 cup marinara sauce

12 ounces Dakota Growers Dumpling Egg Noodle

2 tablespoons olive oil

2 tablespoons butter

6 eggs

1/2 cup Parmesan cheese

1 tablespoon fresh basil (or parsley), chopped

1 teaspoon pepper


  Directions Heat butter in a medium skillet over medium heat. Cook onions and pepper for 10 minutes, stirring frequently. Add marinara sauce and simmer on low 5 minutes. Prepare pasta according to package directions; drain well. In large bowl, combine eggs, cheese, marinara sauce mixture and pasta stir well until thoroughly combined. In a large, non-stick skillet over medium-high, heat olive oil and pour pasta mixture into skillet and cook covered for 5 minutes; do not stir. Remove from heat, transfer to oven-safe platter or pizza pan. Sprinkle with additional Parmesan and pepper. Place under pre-heated broiler 5 minutes, or until top of fritata begins to turn golden brown. Cut in wedges and serve. Servings 4
