Cheesy Pasta Pie



6 ounces spaghetti, cooked and drained

1 teaspoon olive oil

6 eggs, divided as 2 and 4, and beaten

1 10-ounce package frozen spinach, chopped

1/2 cup green onion, thinly sliced

1/4 cup parsley, chopped

1 teaspoon basil

1 cup low-fat cottage cheese

1/2 cup whole milk or half & half

1/2 cup mozzarella cheese, shredded

1/2 cup Romano cheese, shredded

salt and pepper to taste

1/4 cup Parmesan cheese, grated


  Directions Combine cooked spaghetti, 2 beaten eggs, and olive oil and press into the bottom and up the sides of a 10-inch pie pan. Cover edge of pasta with greased foil to prevent burning. Bake 7-10 minutes in a 375 degree oven, or until pasta is set. Cook spinach according to package directions and drain well. To the spinach, add green onions, parsley and basil. Combine cottage cheese, milk, 4 eggs, and mozzarella; stir in vegetable mixture and Parmesan cheese. Spoon into pasta shell and sprinkle Romano cheese over mixture. Bake at 375 for 30 minutes, or until set. Let stand 10 minutes before serving. Servings 6
