Squash Nut Sweetbread

 


Ingredients
1 (15.0 oz.) can of Squash
1-1/2 cups flour
1/2 tsp. salt
1 tsp. baking powder
3/4 cup brown sugar
1 tsp. cinnamon
1 tsp. grated nutmeg
1/2 tsp. salt
2 eggs, beaten
1/2 cup butter, melted
3/4 cup walnuts
Preheat oven to 350oF. In a mixing bowl, combine flour, salt, baking powder, sugar, and spices. Stir in pumpkin, eggs, and butter; add walnuts and mix. Scrape into a greased 6 x 9 loaf pan and bake for 1 hour (or until knife inserted in bread comes out clean).
