Lemonade Pie

 


Ingredients
¾        cup boiling lemonade
1        package(4-serving size) lemon flavored gelatin dessert
¾        cup cold lemonade
½        cup softened cream cheese
1        cup whipped topping, thawed
1        (6-ounce) shortbread flavored prepared pie crust
Cooking Directions
In large bowl, stir boiling lemonade into gelatin.  Stir until gelatin is completely dissolved.  Stir in cold lemonade.  In another bowl, beat cream cheese until smooth.  Whisk gelatin into cream cheese; beat until smooth.  Place bowl with cream cheese and gelatin mixture into a large bowl filled with ice.  Let mixture stand about 5 minutes, stirring often until the mixture is the consistency of unbeaten egg whites.  Gently fold in whipped topping until well combined.  Spoon prepared filling into crust and refrigerate several hours until firm.  Before serving, garnish with additional whipped topping and lemon twists.  Serves 8.
