Easy Strawberry Pie

 


Ingredients
1        (9-inch) shortbread pie crust
1        package (4-serving size) strawberry flavored gelatin dessert
1        cup boiling water
1        (8-ounce) container lite non-dairy whipped topping
1        cup sliced fresh strawberries
Cooking Directions
In large bowl, stir water into gelatin until completely dissolved.  Refrigerate gelatin mixture about 20 minutes or until slightly thickened (mixture will resemble the consistency of unbeaten egg whites).  Gently stir in 2 cups of the whipped topping.  Refrigerate mixture for 15 minutes.  Stir in fresh strawberries and spoon into crust.  Refrigerate 2-3 hours or until firm.  Cut pie into wedges and serve with remaining whipped toppings.  Serves 6-8.
