California Raisin Shortbread

 


Rich and raisiny -- cookies to indulge picky eaters.
INGREDIENTS
1 cup butter or margarine
1/2 cup granulated sugar
1 egg yolk
1-1/2 teaspoons vanilla
2 cups sifted flour
1/2 teaspoon salt
3/4 cup California raisins
PROCEDURE
Beat butter and sugar together until light. Blend in egg yolk and vanilla. Mix in flour and salt. Stir in raisins. Drop by teaspoonfuls onto lightly greased baking sheet. Bake at 400°F about 10 minutes. Let cool slightly in pan; then, remove to wire rack and cool completely.
Yields: 3 1/2 dozen cookies
