Savory Beet and Goat Cheese Tart

 


Ingredients
1 (15.0 oz.) can or (16.0 oz.) jar of Sliced Pickled Beets, well drained
1 tbsp. olive oil
2 cups onion, thinly sliced
1 9-inch prepared pie crust
1 (8.0 oz.) pkg. herb and garlic flavored goat cheese
1 tsp. thyme
Grated lemon peel (optional)
Preheat oven to 450oF. In large nonstick skillet, heat oil over medium-high heat. Add onion; cook and stir until onion is golden brown (approx. 15 minutes). Remove from heat. Place pie crust on ungreased baking sheet. Spread onions evenly over crust, leaving a 1-inch border. Arrange beets over onions and dot with goat cheese; sprinkle with thyme. Fold pastry edge over beets crimping edges, leaving center uncovered. Bake for 20 minutes or until crust is golden brown. To serve, slice into wedges and garnish with lemon peel.
