Mediterranean Meatloaf

 


Ingredients
1 (8.5 oz.) can of Peas & Carrots, drained
1-1/2 pounds ground turkey
2/3 cup prepared Italian-seasoned bread crumbs
2/3 cup chopped red onion
3 garlic cloves, minced
1/2 tsp. salt
1/2 tsp. pepper
2 eggs
1 (14.5 oz.) can diced tomatoes with onion and herbs
Preheat oven to 350oF. In large mixing bowl, mix turkey, bread crumbs, onion, garlic, salt, pepper, and eggs. Add peas & carrots, mix well. Place mixture in 9 x 12-inch baking dish and shape into a loaf. Bake 30 minutes. Spoon diced tomatoes over top of meatloaf and bake an extra 30 minutes. Let stand for at least 5 minutes before serving.
