Puffy Corn Fritters

 


Ingredients
1 (29.0 oz.) can of Whole Kernel Sweet Corn, drained
2-2/3 cup flour
3 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 cup milk
2 eggs, beaten
Sift together flour, baking powder, salt, and sugar. In separate bowl, blend milk and eggs; add gradually to dry ingredients. Stir in corn and drop from tablespoon in deep hot oil (375oF). Fry until golden brown; place on paper towels and serve with warm maple syrup.
Makes 16 - 20 fritters
